Abstract: The cited compounds were determined in commercial dried vegetables on an anion-exchange column of chemically modified silica gel with acetonitrile - phosphate buffer as mobile phase and post-column derivatization by treatment with alkaline triphenyltetrazolium chloride solution, the resulting red formazan being detected photometrically. This HPLC method gave better separation and was more rapid and specific than conventional amino-acid analysis. Fructosepyrrolidonecarboxylic acid was detected for the first time.
